No.  Currently we only output CMYK and RGB color info in our 
PDF docs, and there is a whole separate area of the PDf spec to do
with declaring Color Spaces that we just do not deal with.
Our Color objects allow you to attach extra data, but
the canvas does not do anything with it; the spot attribute you saw
is however used by our Diagra product when making color separating
EPS, but not for PDF.

Color-separable PDF is a big subject; if someone wants to
contribute that feature it would be great, but probably quite a big job
involving proper testing with a range of print architectures,
and it would rapidly drift into supporting bleed and knockout as well. If
we did it ourselves (and there is no scheduled work on this), it would 
probably go into the commercial parts of our framework.  And there 
are plenty of PDF post-processing tools that do it already AFAIK.
