OK, I realise I haven't been helping much and not really answering
your question, not providing meaningful responses (thanks Scott),
sorry, that wasn't my intention, just came out that way.
So here's what I can think of right now, looking at whatever sources
come to mind. Mostly specific exchange details that I can find in RSGB
UK contest rules.

The obvious:
Callsign
RST (srx/stx)
serial number

The obscure (let me know if you want more info)
District Code - i.e. SE = London SE1-28, BM = Birmingham (see http://www.vhfcc.org/hfcc/information/districtcodes.shtml
for a list)
HQ (literal text), "HQ stations will additionally send HQ, which must
be logged". Used in BERU (Commonwealth Contest).
UK PostCode - RoPoCo contest (some contests only the first 2 letters)
Power - used in QRP field day
Name - persons name or some name person wishes to use - used in RSGB
Sprint
Name of Club + "Club Station", "Club Member" or "No Club", as
appropriate.
NB: the name of the club must be sent in full. It must not be sent as
initials.

The ADIF fields Scott posted in his Whirlwind mail:
CHECK - Contest check for ARRL sweepstakes
CLASS - for Field Day
CNTY - The contacted station's secondary administrative division
COUNTRY - obvious
GRIDSQUARE - for VHF contests and Stew Perry, for example
IOTA - Islands on the Air identifier for the contacted station
ITUZ - ITU Zone of contacted station for CQ WW, etc.
PRECEDENCE - for ARRL SWEEPS
TEN_TEN - 10 10 number
